Sydney’s new gastropub will take you to the heart of Great Britain

One of Glebe’s most charming heritage pubs, The Nag’s Head, has done away with its standard pub grub by welcoming in chef Nelly Robinson and a new British-inspired concept that’ll transport you straight to hospitable heartland of United Kingdom.

The prolific British-born chef struck gold when he began curating highly themed degustation menus at his Surry Hills restaurant, NEL. Whether hinged on pop culture or even elevated fast food (he once served a very popular KFC-inspired menu), the culinary wizard’s kaleidoscopic tastes quickly captured the imagination of Sydney’s most discerning diners.

And with that reputation behind him, Robinson is well-placed to lift The Nag’s Head with something unique for this city, pitching Winstons as a UK-themed gastropub where guests can sit down to a seven-course menu of refined Great British cuisine. Think scotch eggs, beef cheek wellington and crumpets with chicken fat butter.

Nelly was raised in traditional British pubs so this project sits close to his heart. He even worked with Gastropub pioneer Nigel Haworth in his late teens.

Winstons is inspired by the kind of gastropubs you’ll find scattered across Bray and Edinburgh, hearty, cosy, cinematic bastions of hospitality complemented by British comfort food like beef cheek and peppercorn pies and fried tandoori chicken burgers.

The pub will do a traditional British roast every Sunday just like they do it over in the UK. The offering will change weekly but Nelly is reportedly already flying through ideas like smoked chicken with truffle butter and a slow-cooked lamb shoulder with mint jelly. Of course, you’ll also get to have a slice of Yorkshire pudding.

Winstons isn’t the only thing transforming The Nag’s Head into a slice of Great Britain via Glebe. Robinson eventually wants to use the front bar as a deli where anyone can purchase ready-to-cook classics like fish pie and beef cheek pie. A new in-house brewery and distillery will provide unique craft ales and boutique spirits. And there should also be extra room for larger parties and functions as The Nag’s Head continues to evolve.

Note that Winstons is only open for dinner from Thursday through Sunday with several sittings per night.
