One of Sydney’s classic steakhouses just reopened in The Rocks

After a renewed focus on hospitality and a desire to elevate the dining scene around Circular Quay, Hunter Street Hospitality has unveiled a new lease on life for beloved steakhouse, The Cut Bar & Grill.

The Cut, which has been operating out of a heritage space in The Rocks for over ten years, has reemerged from a four-year slumber. The new-look for the restaurant doubles down on the space’s ambient heritage details, billed as a high-end Australian steakhouse washed with stately wooden booths and large marble tables in a former bond store in the Argyle Stores precinct.

And with the makeover comes a brand new menu. Sydneysiders would have rioted if the slow-cooked signature standing prime rib was removed, so that’s back. Now it’s sliced and served table side with two different portion sizes, 300g and 450g, and your choice of red wine sauce or horseradish cream.

Other mains now include a selection of meat and seafood classics like a John Dory with romesco, lamb cutlets, pork chops, eggplant parmigiana, and Eastern Rock lobsters served with herb butter. It’s the template for a classic New York-inspired steakhouse, refined with all the expected trimmings as well as a few surprises like beef empanadas in hot sauce and a surf & turf with roast beef, beef fat potato and caviar.

But if steak is what you’re here for, you’ll get to pick from some pretty special cuts like the Coppertree Hereford grass-fed fillet MB3+ or the Westholme Wagyu 800g rib eye with an optional fried egg. Sit that with a side of twice-cooked chicken fat potatoes and cacio e pepe mac and cheese if you’re feeling especially indulgent.

Newly appointed Hunter Street Hospitality CEO Frank Tucker has expressed his faith in The Rocks “coming back” over the past few months. The hospitality group, best known for Sydney stalwarts Rockpool Bar & Grill and Spice Temple, seems to be going all-in on a revival for Sydney’s heritage district which sits hand-in-hand with Circular Quay and is easily accessible from Overseas Passenger Terminal.

“The Rocks is part of the DNA of Hunter St Hospitality, this is our home, and investing in our premium venues in the area is also future proofing the whole destination,” said Tucker.

“We can’t wait to welcome people back into the doors of The Cut and showcase how we elevated it.”

Drinks like a signature Gibson with Oyster Shell Gin showcase technique-forward classics with their own identity. The extensive menu also features a Pavlova cocktail with vodka, chantilly and passionfruit, and and a ‘Banga-Rira’ with Anejo, smoked chiptole, banana and pear.
