PM Albanese opens Hay Street Market, calls it โ€˜An Attraction for the Worldโ€™

Prime Minister Anthony Albanese joined Premier Chris Minns and Lord Mayor Clover Moore at the official opening of Hay Street Market โ€“ and immediately recounted how, as a kid, he watched AC/DC at the site.

The new foodie’s market at Paddys, which features 25 different cultural cuisines and 48 stalls, is expected to attract locals and tourists alike with its variety of foods, late-night opening and venue close to Chinatown.

The opening ceremony told the story of how Paul Signorelli OAM and his family created the $20 million project, born out of the Covid era when the markets lay empty. Signorelli is a Sydney icon and teamed up with the Daltone Hospitality Group to create the venue.

Paul Nicolaou of BusinessSydney was the master of ceremonies and State Minister for Tourism the Hon Steve Kamper and Federal Member for Sydney Tanya Plibersek were there to see the plaque unveiled.

Guests were told the 3,000 square metre destination is already attracting locals, tourists, and visitors from all walks of life who are seeking something fresh and authentic.

The market is a tribute to the city’s diverse culinary history and love for bold, flavourful experiences, and as a nod to neighbours, the ceremony concluded with a lion dance from Chinatown performers.

Celebrity chef and TV presenter Luke Nguyen is involved, and his fatherโ€™s closely guarded phแปŸ recipe with โ€œsecretโ€ 24-hour broth is available. There is plenty of Asian food represented, including a dumpling stall featuring Singapore chilli crab and laksa dumplings, a bรกnh mรฌ shop with wagyu brisket roll dunked in a zingy salsa. 

Indigenous chef Mark Olive’s Little Midden is also represented, serving smoked blue gum barramundi and saltbush bell pepper skewers. Tim Casey, former of Rockpool has a meat shop and cheese expert Christina Murphy also has a shop. There are also fresh flowers, seasonal produce, artisanal homewares and wine.

Doltone Hospitality Group is managing the area. โ€œInspired by some of the worldโ€™s best markets, weโ€™ve built something extraordinary that harnesses Sydneyโ€™s cultural diversity,โ€ said Doltone CEO and managing director Joseph Murray in a statement.ย 

Open 7 days a week, from early morning to late evening, Hay St Market at Paddyโ€™s is, according to the Prime Minister, set to become a national and international attraction.
