A squadron of 64 Travel + Leisure reporters were tasked with the arduous(!) job of visiting new or renovated hotels across the world. Travelling to 44 countries, they stayed at big-name brands, independent boutiques and even lavish locations that charge more than $5,000 per night. Their aim? To compile the T+L 2025 It List. From beach getaways and over-the-top retreats to adventure resorts and city hotels, they have shared their definitive list of the 100 best new or renovated hotels in the world.

Among the hotels they deem worthy of travelling for this year, The Eve Hotel Sydney flys the flag for the Harbour City.

When reaching their judgement, T+L’s selected editors judged hotels based on: rooms, amenities, location, service, food, value, experiences, design, sustainability, accessibility and inclusivity.

What makes The EVE Hotel one of the best places to stay in Sydney?

When we went along to the opening of the new Redfern hotel in late February, we felt it was “something the city has never seen before. Yet has desperately needed.” The design and personality of the new space shone through and transported us to Miami circa 1960.

It seems to have captured the heart of T+L too, with descriptions of the ‘pomegranate-red zellige tiles’, ‘blinding-blue Gervasoni Nuvolo seats and footstalls meet pink mohair armchairs’ and the hotels’ ‘fabulous’ art collection taking the bulk of Kendall Hill’s review. He summarises The EVE Hotel by saying: “The Eve anchors the new Wunderlich Lane precinct, which, with it’s emphasis on art, design and gastronomy… has transformed Sydney’s Redfern neighbourhood.” From a 17th century gilded Belgian portrait to a living wall, the details in the design certainly set the hotel apart from all the other new hotels in Sydney.

There are 102 rooms and suites which range from 27 square meter sanctuaries to spacious 36 square meter suites. Bathed in Australian tones of eucalyptus and ochre, the blend of leathers, velvets, terrazzo and timber give the rooms a gorgeous luxe feel.

It’s not all surface level, though. The amenities, including the sparkling rooftop pool, and fantastic lineup of restaurants and bars also earned the hotel its spot on the It List.

In the rooms, mini bars are stocked with homegrown heroes, including spirits by Archie Rose Distilling Co from nearby Roseberry, caramels from Pepe Saya and craft beers brewed down the road. Elsewhere, its neighbouring rooftop Mexican restaurant and mezcal bar, Lottie, has been gaining a rep online for its fully gluten free menu of tortillas and tamales and its social media-worthy aesthetic. Streetside Bar Julius is also a regular on our FYP with TikTokkers falling head over heels in love with the designโ€”caviar for breakfast and all-day Bloody Marys are good reasons to visit, too.

Sitting within the same precinct as viral sensation Olympus Dining, southeast Asian spot Island Radio and retro bar Baptist St Rec Club, there’s hungry competition but The EVE rises to the challenge.

We were impressed when visiting back in February and it’s great to see this exciting new Sydney spot getting recognition worldwide. There seems to be plenty of availability in the coming weeks and monthsโ€”for now.

Lottie is the rooftop Mexican restaurant and mezcal bar that’s going down very well with Sydney’s foodies.
